Mushroom Foraging and Spanish Cooking

Forage and Cook Mushrooms!
Start the day with a guided walk through the forest in search of edible fungi with Galway’s foremost mycologist and foraging specialist Cesare Morciano of NUI Galway. Cesare has been the forager for a number of restaurants in Galway including Michelin starred “Loam Restaurant” for many years.
After a brief introduction, he will show you where mushrooms grow, why they grow where they do, and how to distinguish the edible from the inedible.
Upon return to The Three Towers, identify your harvest and stay on for the evening with a Spanish cooking class. This is a chance to sample your hard earned mushroom harvest as chef Miguel Castro demonstrates how to cook the mushrooms in simple and delicious tapas and paella dishes. Paella is a versatile rice dish with ancient roots in Valencia Spain. It can be made with meat, fish or vegetarian and is a great meal that can be used again and again. Participants receive a take-away paella box and a glass of wine
